Sangiovese juice for our Rosato comes from two sources. Some of the grapes are crushed into bins for skin contact before pressing. We also drain off about 15% of the juice from the red wine tank prior to fermentation. The two juices are combined and fermented to make a delicious, dry, food-friendly rose.
